Veggie Delight

Breaded Zucchini


Today, Amanda and I decided to stick with the theme of coating and baking foods. If you want something even healthier than our delicious mozzarella sticks, then you can try these treats. These breaded zucchini sticks are simple and easy to make. Enjoy!















Breaded Zucchini Sticks

Yields as many servings as desired
Cooks for approximately 20 minutes

Ingredients

1 cup of breadcrumbs
2 small zucchinis
2 egg whites

Directions

1. Preheat the oven to 375F.
2. Put the egg whites and the breadcrumbs in two separate shallow bowls.
3. Cut the zucchini into circles or strips.
4. Coat the zucchini with the egg whites. Then coat the zucchini in breadcrumbs.
5. Cook the zucchini for 10 minutes. Flip over the zucchini and cook for an additional 8-10 minutes.
