Peanut Butter: Repurposed

Asian Peanut Noodles

Our family goes through a giant jar of peanut butter every week. Minimum. It is safe to say that we are peanut butter lovers! Typically, we eat peanut butter on sandwiches, crackers, on a sliced banana or apple, stirred into our oatmeal, or just straight out of the jar with a spoon. For our blog, we wanted to find a new and creative way to use peanut butter, so we decided to make Asian peanut noodles. This recipe is simple, and our family loved our new use of peanut butter! So if you are craving some peanut butter, ditch the plain peanut butter and try making this recipe instead (although, it is still acceptable to eat it straight out of the jar). Enjoy!




Asian Peanut Noodles

Yields 6 servings
Cooks for approximately 10 minutes

Ingredients

12 ounces whole wheat linguini
1/3 cup peanut butter
1/4 cup honey
1 tablespoon water
Sesame seeds
Feel free to add vegetables such as peppers, onions, carrots

Directions

1) Boil the linguini.
2) Mix the honey and peanut butter together in a small bowl. Mix in the water.
3) Warm up the peanut butter mixture in the microwave to soften the peanut butter.
4) Add the peanut sauce to the pasta.
5) Sprinkle sesame seeds on top of pasta. Add cooked vegetables, if desired.
