Strawberry Chocolate Chip Muffins
For our first recipe, we decided to bake muffins. Muffins are a great snack or breakfast food, but when they are store-bought, they are often high in calories and saturated fats. So, making your own muffins is a quick and healthy alternative. With our basic muffin recipe, you can really add in any of your favorite fresh or dried fruit, nuts, chocolate, etc. Our muffin recipe uses applesauce in place of oil to make things healthier. We also chose to include strawberries and chocolate chips, because who doesn't love chocolate covered strawberries?
Strawberry Chocolate Chip Muffins
Yields approximately 12 muffins
Cooks for 12-14 minutes
Muffins
1 and 1/2
cups whole-wheat or enriched flour
1/2
teaspoon baking soda
1/2
teaspoon ground cinnamon
1/3 cup
granulated sugar
1/4 cup
light brown sugar, packed
1/2 cup and
3 Tablespoons apple sauce
1 egg white
2/3
overflowing cup of diced strawberries
1/3 cup
chocolate chips
Chocolate drizzle
¼ cup of
chocolate chip
2
tablespoons of milk (preferably skim or fat free milk)
Directions
1.
Preheat the oven to 350F. Line a 12-cup muffin
tin with liners.

Mix the flour, baking soda, and cinnamon in a
small bowl. Then add the light and granulated sugar to the mixture. Make sure
there are no lumps in the light brown sugar.

Mix the egg white and applesauce together and
add to the dry ingredients.
4.
Stir until the batter comes together. Be sure
not to over mix.
5.
Slowly add the chocolate chips by folding the
batter. Then add the strawberries by doing the same.
6.
Spoon the batter into the muffin tray. Fill each
tin 2/3 of the way to the top. Cook at 350F for 12-14 minutes or until a
toothpick when inserted into the muffin comes out clean.
7.
While muffins are cooking prepare the chocolate
drizzle. Mix the chocolate and milk in a shallow bowl and heat until the
mixture obtains the desired consistency. Drizzle chocolate over the cooled
muffins.
