More Muffins!


Banana Zucchini Chocolate Chip Muffins



I know not everyone likes bananas and zucchini. I'm not even a banana lover, but these muffins are simply irresistible. What's better than a delicious treat that contains a fruit and a vegetable? If you don't know what to do with two ripe bananas and a zucchini freshly picked from your garden, then this is the recipe for you! Enjoy!











Banana Zucchini Chocolate Chip Muffins

Yields approximately 24 muffins
Cooks for 15-20 minutes

Ingredients

3 eggs
1 cup apple sauce
1 ½ cups sugar
2 cups flour
¼ teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons vanilla extract
1 cup raw zucchini, shredded (approximately 1 zucchini)
1 cup ripe banana, mashes (approximately 2 bananas)
½ cup walnuts
½ cup semi-sweet chocolate chips


Directions

1. Preheat the oven to 350F. Line a 12-cup muffin tin with liners. You can also use a non-stick mini loaf tin.
2. Mash the banana and shred the zucchini.
3. Combine and mix the eggs, applesauce, and sugar in a bowl.
4. Mix in the flour, baking powder, baking soda, cinnamon, salt, and vanilla extract.
5. Add the banana and zucchini and continue to mix.
6. Fold in the walnuts and chocolate chips until evenly distributed.
7. Spoon the batter into the muffin tray. Fill each tin 2/3 of the way to the top.
8. Cook for 15-20 minutes or until a toothpick when inserted into the muffin comes out clean.
