Cauliflower Power: Part 2

Vegetable Fried Cauliflower "Rice"



After making cauliflower crusted pizza, Amanda and I wanted to make something else with the remaining cauliflower. Since the cauliflower has a rice-like consistency, we decided to recreate fried rice. This recipe does lack soy sauce, but it is our creation of healthier fried rice. We put mushrooms and peppers in our fried rice, but other vegetables such as tomatoes and broccoli can be used. Enjoy!









Vegetable Fried Cauliflower "Rice"

Yields 4 servings
Cooks for approximately 10 minutes

Ingredients
2 cups cauliflower, food processor
1 red pepper, diced
1 green pepper, diced
1 cup mushrooms, chopped
1 cup water
1 tablespoon olive oil

Directions
1.  Wash head of cauliflower. Break up into smaller pieces to fit in food processor. Pulse in food processor until cauliflower is completely shredded and has a rice-like consistency.
2.  Wash 1 medium-sized red pepper and 1 medium-sized green pepper. Chop the peppers.
3.  In a shallow pan, cook the peppers on medium heat until they are nearly cooked.
4.  Wash mushrooms and chop. If you would like, you can use mushrooms that are pre-sliced.
5.  Mix the mushrooms and cauliflower into the peppers. Make sure that they are evenly distributed. Then, add water and olive oil.
6.  Cook until the cauliflower is golden and the mushrooms become darker color. Be sure to mix frequently so the vegetables are cooked throughout. This should take about 5-10 minutes.
