Pesto Pasta
This pesto pasta is a perfect summer meal! I love to eat pasta and this is definitely my favorite pasta dish. Instead of using a purchased pesto mix, which is often high in sodium, my sister and I wanted to recreate this classic pasta recipe. Try this at your next summer barbecue!Pesto Pasta Salad
Yields 6 servings

Ingredients
12 ounces farfalle
pasta
1- 1 ½ cup basil
1 clove garlic
1/4 cup parmesan
cheese
3 1/2 tablespoons
olive oil
2 tablespoons
almond slivers
½ cup cherry tomatoes
½ cup low fat mozzarella cheese
Directions
1) Boil the pasta.
2) Pulse the garlic and Parmesan cheese in a food processor.
Then add the basil and continue to pulse.
3) Add the olive oil and almond slivers. Continue to pulse
until the almonds become smaller.
4) Mix the pasta and the pesto until the pesto is evenly
distributed.
5) Cut the cherry tomatoes into quarters and cut the mozzarella cheese into cubes. Mix them into the pasta.
