Angel Hair Pasta with Vegetables
We decided to make a fast, easy dinner tonight. Because we both love to eat pasta, we wanted to cook some angel hair but make sure to add tons of fresh vegetables. We cooked some broccoli, zucchini, yellow squash, tomatoes, red pepper, and mushrooms and mixed it with this dish. Feel free to sprinkle some Parmesan cheese on top and enjoy!
Yields approximately 6 servings
Cooks for approximately 20 minutes
Ingredients
1- 16 ounce box angel hair pasta1 medium-sized yellow squash
1 medium-sized zucchini
7-8 cherry tomatoes
1/2 medium-sized red bell pepper
3-4 cups brocoli
1-2 cups mushrooms
1/4 cup water
Directions
1) Slice the mushrooms. Slice and chop the squash and zucchini. Cut the tomatoes into fours. Cut the broccoli into desired pieces. Chop the red pepper.
2) Mix the vegetables together in a large pan. Add the water to the vegetables.
3) Cover and cook the vegetables for approximately 15- 20 minutes, or until the zucchini and squash are cooked.
4) While cooking the vegetables, bring a pot of water to a boil. Cook the angel hair for approximately 3 to 5 minutes or until al dente.
5) After the angel hair pasta and vegetables are cooked, mix the vegetables into the pasta. Add parmesan cheese, if desired.
