Greek Yogurt Cinnamon Roll Doughnuts

Happy almost-National Doughnut Day, everyone! In honor of National Doughnut Day, which is June 5, we decided to cook up a healthy take on this classic treat. Kimberly absolutely loves to eat doughnuts. It is always a good day when our mom comes home from the local doughnut and coffee store with a brown bag heavy with the weight of a strawberry-frosted doughnut. Without a doubt, doughnuts are delicious, but they can be deep-fried and loaded with sugar and fat. We wanted to make doughnuts that were baked--not fried--and utilized healthy substitutions for butter and sugar. In these doughnuts, you will find Greek yogurt and applesauce making them extra moist, and whole-wheat flour making them even heartier. We have even combined them with one of our other favorite breakfast treats--cinnamon buns! We love how these doughnuts taste delicious, yet are SO much healthier than the ones you can buy at the store. Enjoy!

Greek Yogurt Cinnamon Roll Doughnuts

Yields 8 doughnuts
Cooks for approximately 10 minutes

Ingredients

Doughnuts

3/4 cup whole wheat flour
1/4 cup sugar
2 tablespoons cornstarch
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1- 5.3 oz. plain Chobani Greek yogurt
1/4 cup applesauce
2 tablespoons skim milk
1 1/2 teaspoons white vinegar
1 large egg

Cinnamon Sugar

2 tablespoons applesauce
1/3 cup light brown sugar, packed
1 tablespoon cinnamon
2 teaspoons skim milk

Glaze

1/4-1/2 cup confectioners' sugar
2 tablespoons reduced fat cream cheese
1 tablespoon skim milk
1/2 tablespoon vanilla extract

Instructions

1. Preheat the oven to 325F and lightly grease a doughnut pan.
2. To make the cinnamon sugar, mix together the applesauce, brown sugar, cinnamon and milk.
3. Pour 1 teaspoon of the cinnamon mixture into each doughnut cavity.
4. In a large bowl, mix flour, sugar, cornstarch, baking powder, cinnamon, nutmeg and salt.
5. In another bowl, whisk together Greek yogurt, milk, vinegar, applesauce and egg. Add the wet ingredients to the dry ingredients and mix completely.
6. Scoop the batter evenly into doughnut pan.
7. Bake for 8-10 minutes or until a toothpick inserted into the center of the doughnut comes out clean.
8. Whisk the confectioners' sugar, cream cheese, milk, and vanilla extract until smooth. If the glaze is too thin, add more sugar as needed. If the glaze is too thin, add more milk as needed.
9. Cool for 10 minutes and drizzle with glaze.
