Crab Cakes


Crab Cakes

Today we decided to make homemade crab cakes. Making crab cakes may seem like it would be difficult and require a lot of time, skills, and ingredients, but you wouldn't believe how simple these crab cakes are to cook. They are incredibly easy to make, and our family loved eating them. See our step-by-step photos below!










Crab Cakes

Yields approximately 7 crab cakes
Time: 1 hour and 30 minutes

Ingredients

12 ounces crab
¾ cup reduced fat crackers, crushed (approx. 20 Club crackers)
1 red pepper, chopped
2 tablespoons plain Greek yogurt

1 egg + 2 egg whites
1 1/2 tablespoons parsley
½ lemon, juice
1 1/2 tablespoons mustard
Salt and pepper to taste

Directions

1. Preheat the oven to 400F and line a pan with parchment paper.
2. Chop the peppers and crush the crackers.
3. In a small bowl mix the eggs and the Greek yogurt.
4. Mix in the peppers and the crab. Then mix in the mustard.
5. In a separate bowl, mix the crackers and parsley. Add this to the crab mixture.
6. Squeeze the most of the lemon into the crab mixture and add salt and pepper to taste. Be careful not to over mix.
7. Refrigerate the crab mixture for 30-45 minutes.
8. Gently shape the patties using the 1/3 measuring cup.
9. Bake for 10-12 minutes. Flip the patties. Cook for an additional 10-12 minutes or until they become golden brown.
10. Squeeze lemon juice onto the cooked crab cakes.
