Spinach Ravioli
After seeing how successful our “healthy” mozzarella sticks
were last week, we decided to use wonton wrappers in another recipe. The
wrappers seem to be able to be used in an endless variety of ways, and they are
an easy shortcut to having your own pre-cut squares of dough. We knew that we
wanted to cook homemade ravioli, but it is a long process to make your own
pasta. So, we wanted to make a fast and easy ravioli recipe and thought of
using wonton wrappers once again! We stuffed our ravioli with spinach, part
skim ricotta cheese, and Parmesan cheese, but you can really add whatever
add-ins you would like. We put about a tablespoon of the mixture in each
ravioli, sealed off the ravioli with a wonton wrapper on top, and crimped the
edges down with a fork before baking them in the oven.
Spinach Ravioli
Yields approximately 32 ravioli
Cooks for approximately 15 minutes
Ingredients
10-oz package frozen spinach
1.5 cups part skim ricotta cheese
1/8 cup grated Parmesan cheese
Salt & pepper to taste
Package of wonton wrappers (ours had 70 in it)
Directions
1) Preheat oven to 375F. Cook frozen spinach according to
package instructions. You may also use fresh spinach in this recipe; however,
we had frozen spinach on hand.
2) Drain spinach and combine in bowl with ricotta cheese,
Parmesan cheese, and salt and pepper to taste.
3) Spread out wonton wrappers on a baking tray lined with
parchment paper.
4) Add approximately 1- 1 1/2 tablespoons of the filling
mixture to each wonton wrapper. Brush around the edges of the wrapper with
water.
5) Place a second wrapper on top and seal the edges down
with a fork.
6) Place into the oven to cook for about 10-12 minutes or
until golden. Follow instructions on wonton wrappers as needed; different
brands may cook for various amounts of time.
7) Remove ravioli from the oven and serve with tomato sauce
and grated Parmesan cheese.
